Instant Pot Healthy Mac & Cheese
Happy Wednesday all! Today was tough as it was my first day back at work after out Christmas break. It felt like the longest day ever and I was so hungry all day.
What is it about working that totally makes your appetite kick up a notch?
I started of my day with a fried egg, a slice of Oroweat Italian bread topped with 1/2 Tbsp Land O Lakes whipped butter and 1/2 an orange (3 sp).
The highlight of my day was the New Year’s sushi celebration lunch at Mikunis I had with my coworkers. I counted it all as 10 sp.
I had 1/3 of this Freaky Edamame.
Ahi wrapped around fresh crab then topped with spicy sauce, grilled asparagus, avocado and a fried scallop. I totally dragged mine in the Sriracha line.
Yellowtail, seared tuna, avocado, cucumber, spicy tuna, crab mix, panko shrimp, sauce, masago and onion.

Raw scallops are so slimy lol.
We made a lightened up version this 6 minute Instant Pot Soutern Mac n Cheese for dinner tonight.
It’s still crazy to me that you dump everything except the cheese into the pot and pressure cook for 6 minutes.
Dare I say this was actually way too much cheese? I think next time I’d use half.
I am pretty sure every noodle was coated in cheese.
This was surprisingly filling, rich and a big hit with The Husband who is always asking me to make hot dogs and M&C lol.
