Instant Pot Buffalo Chicken Mac & Cheese + Weekly Menu
Hi all! How was your weekend? I had such a fantastic weekend kicking off my birthday week. I am not even going to deny it, I know I will be celebrating all week long lol. My goal is to track it all and do my best to balance it out.
This weekend we saw the movie Escape Room – it’s so intense, I really liked it. I also got spoiled today with shopping getting a new jacket, 2 new work outfits, 2 workout outfits and cute mini plates. It was the trade off I made for going with him to the Sacramento Antique Faire.
Before heading out, I had one of these Jimmy Dean Bacon & Cheese Egg White Omelettes. I have only seen them at Sam’s Club and I am so glad they are back.


It was so beautiful watching this on our drive.

Today’s prep included:
Whipping up zero point ranch using 0% Greek yogurt with hidden valley mix to dip veggies in. Instant Pot hard boiled eggs (that I hope turned out because I messed up the seal).I made this WW Smoky Black Bean and Sweet Potato Chili for lunches. I know I love this combination in tacos so this will be delicious.

OMG all – it turned out so good and took only 20 minutes to make!
I kept the Frank’s Red Hot on the light side so I didn’t spice out The Husband.
