Simply Filling Turkey Meatloaf Muffins
#FlashbackFriday with these easy 1 WWFreestyle Smartpoint Turkey Meatloaf Muffins. Fun fact – they are Zero Smartpoints if you use extra lean ground turkey breast. Make up a batch for lunch or dinner, but, be sure to freeze a few for days when your short on time and need a quick meal or snack.
I have been craving these hearty, Stove Top Stuffing Turkey Meatloaf Muffins ever since my friend introduced me to them last year. The thing is most prepackaged stuffing mixes I found did not have an ingredient list I really liked and my friends at Trader Joe�s thought I was just a little crazy asking about stuffing already lol.
I realized I was trying to convince myself to �search� for a package mix that wasn�t even Simply Filling. I could�ve probably ventured out to try to make my own stuffing from scratch using �light bread�, but, I just wasn�t feeling quite �that� ambitious. I totally blame the cool fall weather for that and for my sudden need to make these tasty Simply Filling Turkey Meatloaf Muffins.
I improvised by adding in a some healthy oat bran for moisture and to bind all the vegetables in the muffins together. These simple turkey mini meatloaves are packed with veggie goodness and they have built in portion control. Double the batch the next time you make them to individually freeze the next time you need a quick, low point meal or snack and do not have time to cook.
TURKEY MEATLOAF MUFFINS (print it!)
INGREDIENTS
1.25 pounds lean ground turkey 1 bell pepper, seeded and diced 1 jalapeno, seeded and minced 1 onion, diced 2 garlic cloves, minced 1 cup mushrooms, diced 1 zucchini, sliced and diced 1 egg white 1/4 cup oat bran 1 Tbsp Worcestershire sauce 1/2 tsp Italian seasoning 1/2 tsp thyme or sage sea salt & black pepper 1 tsp crushed red pepper flakes, optionalINSTRUCTIONS
1. Preheat oven to 350 degrees. Spray a 12 cup muffin pan with nonstick spray.
2. Mix all ingredients thoroughly and divide into 12 meatballs.
3. Add the turkey meatballs to the muffin pan and bake at 350 degrees for 40 minutes, until browned and cooked through.

While the oven preheats, combine all the ingredients in a large mixing bowl.
You could use a spoon, but, honestly, your hands are the best mixers for making meatballs. Toss gently until everything is combined, but, not compacted.
Divide into 12 large meatballs and place into a prepared 12 cup muffin pan. It is easier to divide them all into 12 before you add them to the pan to make sure they are even, about a 1/2 cup per ball.
Bake at 350 for 40 minutes until golden and cooked through. Remove from pan and place into a large container for easy snacking or meal additions.
Enjoy these straight up or serve them up top with ketchup, salsa or hot sauce. For just 1 Smartpoint, you can definitely have at least 2 or 3 of these Turkey Meatloaf Muffins.
