#FlashbackFriday with these 1 Smartpoint Pumpkin Pie Bites that are perfect for Thanksgiving or honestly anytime you want pie!

Hi everyone! I am finally back in action with another fun fall recipe that uses my ingredient of choice lately ~ Pumpkin! If you love pumpkin, then, I am pretty sure you will love these Creamy Pumpkin Pie Bites. These little bite sized pumpkin pies might just be better than the real deal.

The cream cheese adds a nice richness to the cinnamon pumpkin-y goodness in the middle while the won tons add a nice crunchy �pie� shell. Did I mention that each bite in ONLY 1 point so you don�t have to feel bad when you reach for another �slice� bite.

They are perfect to make ahead of time to have as a dessert or an appetizer (sometimes dessert should come first, right?!) Just plan out all the fun toppings you want to serve up to your guests and I guarantee these will be what everyone talks about on their way home from Thanksgiving dinner.

INGREDIENTS

24 New Hong Kong Thin Won Tons 2/3 cup pure pumpkin 1/3 cup low-fat cream cheese 3 Tbsp golden brown sugar 2 Tbsp pure maple syrup 1 1/2 tsp pumpkin spice 1/4 tsp cinnamon 1/4 tsp salt 1 egg

OPTIONAL TOPPERS

Homemade whipped cream Crushed cinnamon graham crackers Cinnamon Sugar or powder sugar Dry roasted chopped candied walnuts

INSTRUCTIONS

1. Preheat oven to 350 degrees. Spray a mini nonstick muffin pan with nonstick spray. Press 1 won ton wrapper into each mini muffin cup, folding the edges as needed. Bake the won tons on the bottom rack in the muffin tin for 5 minutes and remove from the oven.

2. While the won tons are cooking, prepare your creamy pumpkin pie filling. Combine pumpkin through egg in a large mixing bowl. Beat until combined with a hand mixer or an electric mixer.

3. Using a 1 Tablespoon measuring spoon, scoop 1 Tbsp of the creamy pumpkin pie filling into each won ton. Return the pumpkin cream cheese won tons to the oven and bake on the bottom rack for an additional 10 minutes until the filling is set and the won tons are golden.

Be careful to watch them as the won tons can burn quickly.

I figured what better way to put my new fun kitchen gadgets to use than to create a fun new fall recipe involving��Won Tons!

You don�t have to worry about pressing your won tons perfectly into the pan. The goal is just to form little cups which means 1-2 little creases as they are pushed into the tin.

This is the most important step in my opinion because pre-baking them for 5 minutes help to give them a crispy shell on the bottom and the top.

While the won tons bake, �beat� your creamy pumpkin pie mix.

I honestly think this egg beater works better than my electric mixer. It goes so fast and is super smooth without splashing everything all over.

Scoop 1 Tablespoon of mix into each won ton just enough to �almost� fill them.

Bake on the bottom rack for 10 minutes making sure to check on them during the last 2-3 minutes to ensure they do not burn.

Remove to cooling rack and cool at room temperature.

Whip up your toppings while your creamy pumpkin pie cups cool.

One thing I love about the OXO measuring cups is that having the numbers on the top makes it easier to see what you need to measure.

Another use for their Egg Beater ~ 1 Minute Homemade Whipped Cream!

Simply combine 1 cup heavy whipping cream with 2 Tbsp Agave Nectar & 1 tsp pure vanilla extract.

Whip effortlessly for 1 minute�..Tadah!!! 1 Tbsp = 1 points.

One Eggsellant Day

Happy Monday all! This morning I woke up craving my Healthy Eggroll. It’s been too long since I’ve had this cheesy, eggy, goodness.1 Fried Egg on top of a crispy tortilla with melted reduced fat sargento cheese and sriracha (3 sp) with pomegranate seeds.

I grabbed a tall Nonfat Cappuccino with caramel on top for my drive in (2 sp). Truth be told, I really wanted the holiday cup lol.My lunch was so good. I used diced tomatoes in chipotle instead of diced tomatoes with green chillies when I made this Kale, Butternut Squash & Sausage Soup yesterday.

The verdict – I loved the subtle smoky spice.I had 1/6 the pot for 3 WWFreestyle Smartpoints with a banana and sparkling water.

I totally planned my day around having a slice of this brown sugar banana bread (7 sp) for my mid afternoon snack. I also had a persimmon too.Our dinner plans changed when The Husband requested BLTAs. I decided to swap out my second slice of bread with a zero point egg for protein staying power.

Happy Monday all! How was your day? If you were one of the lucky ones who had today off, I bet it was a great day. I wish….but, at least I got the consolation prize less traffic and a half day tomorrow. I can’t complain as today was pretty good for a Monday.

I whipped up this delicious 4 Smartpoint breakfast for us. 1 scrambled egg, 3 Aidell’s chicken apple breakfast links and 1/2 an orange.At Starbucks today, I was watching the barista make my drink…thinking why is he grabbing the spices. I thought surely that is not my drink but see that I am the only one waiting….and, he calls out my name. I ask what he sprinkled on top of my cappuccino. (2 sp)

Hesitant I tried it and it was so good! It made me feel all holiday like.I had a working lunch at Wok of Flame. I really did try to focus on the conversation even though their food is amazing.

Hot n Sour Soup (2 sp).Plus 3 chicken and veggie potstickers (4 sp).Are you all ready for this? I had the Kung Pao Chicken lunch special which was huge but I only ate half and stopped when satisfied.

I had all the Kung Pao chicken (8 sp), 1/2 the steamed veggies and 2 bites of chow mein – success! The Husband met me at Chipotle for dinner before my hair appointment.

I built two delicious & filling 6 point soft chicken tacos like this:

2 flour tortillas (2 sp), 2/3 svg chicken (2 sp), fajita veggies, corn salsa, tomato salsa and a sprinkle of cheese (2 sp).I couldn’t resist trick or treating while gabbing away with my hairdresser (3 sp).29 Daily WWFreestyle Smartpoints, 6K steps

Tomorrow is our annual Elf on the Shelf, Christmas Tree Lighting and food adventures at Santana Row – I cannot wait! I am not sure if I’ll be back tomorrow night to post, but, will be back in Wednesday for sure.
